Apple Bread
This delicious bread can be served savory (think a grilled cheese with brie and prosciutto) or sweet, drizzeled with honey. It's dotted with subtle nuances of sweetness and saltiness making it the perfect afternoon treat. It comes together in a breeze and your whole house will smell amazing. This recipe can also be made vegan!
What You'll Need:
- 3 sweet apples (I like Fuji the best)
- 3/4 cup oil
- 2 tablespoons apple cider vinegar
- 2 tablespoons boiled cider
- 2 tablespoons maple syrup
- 3 eggs (or for a vegan option, 3 tablespoons of B mixed with 6 tablespoons of water)
- 2 teaspoons cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup whole wheat flour
- 1/2 cups all purpose flour
Adjust an oven rack into the center of the oven. Preheat oven to 350o and grease a 9"x5" bread tin.
Peal and coarsley chop the apples. Place them in a microwave safe bowl with a littl bit of water and microwave for 4 minutes until apples are just soft. Drain any exccess juice and let cool. Once cool enough to handle, smoosh em! You can use a food processor - just pulse a few times, a masher, or an immersion blender. The goal is to get small chunks. If you make apple suace, you've gone too far. Set aside.
Add oil, apple cider vinegar, boiled cider, maple syrup, and eggs into a large bowl. Mix on high until foamy. Add the apples and stir to combine.
Combine the cinnamon, baking soda and powder, salt, and flours in a medium bowl. Whisk to combine.
Gently fold the flour mixture into the apple mixture until just combined. Pour the batter into the prepared pan and bake for 50-60 minutes until a knife or toothpick inserted in the center comes out clean.
